Make the mashed potatoes
- Boil potatoes in salted water 12–15 minutes until fork tender.
- Drain and mash with butter, milk or cream, garlic, and salt and pepper. Keep warm.
Cook the steak bites
- Pat steak cubes very dry. Season with salt, pepper, smoked paprika, and garlic powder.
- Heat a large skillet over high heat with olive oil.
- Cook steak bites in batches (don’t crowd the pan) 1–2 minutes per side until browned.
- Reduce heat to medium, add butter and garlic, and toss steak bites for 30–60 seconds.
Make the creamy Parmesan sauce
- In another pan, melt butter over medium heat. Add garlic and cook 30 seconds.
- Add heavy cream, simmer 2–3 minutes, then whisk in Parmesan until smooth. Season with salt and pepper.
Assemble the dish
- Spoon garlic mashed potatoes onto plates.
- Top with steak bites and drizzle with creamy Parmesan sauce.
- Finish with fresh parsley.
