Method
Preheat oven:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
Make the glaze:
- In a small bowl whisk together the hot honey, olive oil, lemon juice, lemon zest, mayonnaise, garlic, smoked paprika (if using), and a pinch of salt and pepper.

Prep the salmon:
- Pat the salmon dry and place it skin-side down on the baking sheet.

Glaze the salmon:
- Spoon or brush the glaze evenly over the top of the salmon.
Bake:
- Bake for 12–18 minutes, depending on thickness, or until the internal temperature reaches about 130°F in the thickest part.

Optional broil:
- For caramelized edges, broil for 1–2 minutes at the end. Watch closely so it doesn’t burn.
Serve:
- Serve immediately with lemon slices and an extra drizzle of hot honey if desired.
