Method
- Rinse rice under cold water until water runs mostly clear.
- Bring water or broth, olive oil, and salt to a boil.
- Stir in rice, reduce heat to low, cover, and simmer 15–18 minutes.
- Remove from heat and let sit covered for 5 minutes.
- Fluff with a fork.
- Stir in lime juice, lime zest, and chopped cilantro.
