Ingredients

  • 2 cups long-grain white rice
  • 4 cups water or chicken broth
  • 1 tbsp olive oil or butter
  • 1 tsp salt
  • Juice of 2 limes
  • Zest of 1 lime
  • ½ cup fresh chopped cilantro

How to Make It

  1. Rinse rice under cold water until water runs mostly clear.
  2. Bring water (or broth), olive oil, and salt to a boil.
  3. Stir in rice, reduce heat to low, cover, and simmer 15–18 minutes.
  4. Remove from heat and let sit covered for 5 minutes.
  5. Fluff with a fork.
  6. Stir in lime juice, lime zest, and chopped cilantro.
