Ingredients
  

Grilled Chicken
  • 1 lb boneless, skinless chicken breast
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and black pepper to taste
Shredded Vegetables
  • 1 cup shredded carrots
  • 1 cup shredded beets
  • 1 cup shredded cucumbers seeds removed
Citrus Dressing
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp orange juice
  • 1 tbsp maple syrup
  • salt to taste
For Assembly
  • 4 Large wraps or torillas
  • 1/2 cup hummus

Method
 

Season the chicken
  1. Pat the chicken dry and coat with olive oil, garlic powder, paprika, salt, and pepper.

Grill the chicken
  1. Grill over medium high heat for 5–7 minutes per side, until fully cooked. Let rest for 5 minutes, then slice thinly.

Prep the vegetables
  1. Shred carrots, cucumber, and beets and place in a large bowl.

Make the citrus dressing
  1. Whisk olive oil, citrus juice, honey, and salt until smooth.
Assemble the wraps
  1. Spread hummus over each wrap. Add sliced chicken, top with shredded vegetables, drizzle lightly with dressing, roll tightly, and serve.
