Ingredients

  • 8 large flour tortillas (burrito size)
  • 10 large eggs
  • ½ cup cottage cheese
  • 1 lb ground turkey sausage
  • 2 cups frozen hash browns
  • 2 cups shredded cheddar cheese
  • 2 cans (4 oz each) fire-roasted diced green chiles, drained

Seasoning

  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper to taste

Optional:

  • chopped cilantro
  • hot sauce for serving

How to Make Freezer Breakfast Burritos

1. Cook the hash browns

Heat a large skillet like this one ☝️ over medium heat with a little oil.

Cook the hash browns until golden and crispy, about 6–8 minutes. Remove and set aside.


2. Cook the turkey sausage

In the same skillet cook the ground turkey sausage over medium heat, breaking it apart until browned and fully cooked.


3. Scramble the eggs

In a bowl whisk together:

  • eggs
  • cottage cheese
  • garlic powder
  • smoked paprika
  • salt and pepper

Cook in a skillet over medium-low heat until just set and fluffy.


4. Assemble the burritos

Lay out the tortillas and layer the filling directly onto the tortilla:

  1. scrambled eggs
  2. turkey sausage
  3. crispy hash browns
  4. diced green chiles
  5. shredded cheddar cheese

Add about ¾–1 cup total filling per burrito.

Fold in the sides and roll tightly into burritos.

Gently press each burrito seam-side down on a hot pan to seal and lightly crisp the tortilla.


5. Freeze

Wrap each burrito tightly in parchment paper or these meal prep containers and place them in a freezer-safe bag.
